The very mention of the name “Italy” brings thoughts of food: pizza, pasta, olives, sun-dried tomatoes, mozzarella, prosciutto….the list of quintessential ingredients and dishes is endless, and so is the astonishing regional variety that characterises Italian cuisine: each and every village, town, province and region fiercely proclaims the supremacy of their particular delicacies, each of which is based on a local harvest and production of oils, fruits, vegetables, nuts, grains, pulses, meats, fish and seafood.
This terrific abundance of fresh produce, and the unusual combination of an endless culinary inventiveness with a staunch attachment to centuries-old recipes, has created one of the great cuisines of the world. Of course, no meal would be complete without a glass of local wine, perhaps a tumbler of local liqueur, and the obligatory cup of intensive, rich and hot espresso.
